生産者から精製、輸送、そして一杯まで。吉祥寺のスペシャルティコーヒーカフェが、なぜ「透明性」を大切にするのか。

一杯のコーヒーがたどる、長い旅
一杯のコーヒーは、私たちが思っているよりも、ずっと長い旅をしています。コーヒーを育てる生産者から始まり、精製、そして遠く離れた場所への輸送を経て、最後にカフェで一杯へと淹れられる。あなたの手元に届くころには、すでにたくさんの人の手を通ってきているのです。
透明性を、大切にしたい
だからこそ、私たちは「透明性（トレーサビリティ）」を大切にしています。OVER COFFEE HUB では、生産者の詳しい情報や——そして何より——それぞれのコーヒーの価格がどのように分配されているかまで分かるプラットフォームを通じて、豆を仕入れています。
つまり、私たちが支払う金額のうち、どれだけが実際に育ててくれた人たちに還元されているのかを、きちんと見ることができるということです。
コーヒーの価格と、その向こう側にいる人たち
コーヒーの価格は、天候や収穫の状況から、世界全体の需要と供給まで、さまざまな要因で変動します。そして、コーヒーが高くなったからといって、生産者の収入が増えているとは限りません。店頭での価格の上昇と、農園での収入の増加は、必ずしも同じではないのです。
より良い一杯を選ぶために
コーヒーがどこから来たのかを知り、その背景にある経済のしくみを理解すること。それは、私たちが何をお出しするのかを、より丁寧に選ぶための助けになります。仕入れる豆、応援したい生産者、そして自信を持ってお出しできる一杯へと、それはつながっていきます。

The long journey behind a single cup
A cup of coffee travels much further than we might imagine. It begins with the farmers who grow it, moves through processing and long-distance transport, and ends at the café where it is finally brewed. By the time it reaches your table, it has already passed through many hands.
Why transparency matters to us
That’s why we think transparency matters. At OVER COFFEE HUB, we source our coffee through platforms that give us detailed information about the producers — and, importantly, how the price of each coffee is distributed.
This means we can see how much of what we pay actually goes back to the people who grew it.
Coffee prices and the people behind them
Coffee prices shift with everything from weather and harvest conditions to global supply and demand. And while a coffee may become more expensive, that doesn’t always mean the producer is earning more. A higher price on the shelf and a higher income at the farm are not the same thing.
Making more informed choices
Knowing where our coffee comes from — and understanding the economics behind it — helps us make more thoughtful choices about what we serve. It shapes the beans we buy, the producers we choose to support, and the coffee we’re proud to put in front of you.
