千葉の海でサーフボードに乗り、日曜には牧師としてキリスト教会に立ち、平日は焙煎機の前で豆と向き合う。橋本哲哉の一日には、コーヒーだけでは説明しきれない時間が流れています。サーフィン、信仰、焙煎――一見バラバラな三つは、彼のなかで同じ根っこでつながっているようです。ここから先は、OVER COFFEEの共同創業者、チーフロースター・哲哉さん自身の言葉で。

「わたしにとって焙煎とは、神への献げもの」そう言うと、「何を言っているんだ、この人は」と思われるかもしれません。確かに、そうかもしれません。

コーヒー焙煎は、科学です。生豆に熱を加えることで起こる熱化学反応によって、風味が生まれます。投入温度、排気、火力、温度上昇のカーブ、時間――そのすべてが数値によって管理されます。豆の含水率や密度、内部の圧力上昇によって生じる「ハゼ」もまた、物理現象として説明できるものです。

一方で、官能評価は数値化しきれません。最終的には、ロースターの経験と感性に委ねられます。ハゼ音のリズム、豆の表情、立ち上る香り――センサーでは拾いきれない微細な変化を五感で感じ取り、その場で調整することが求められるからです。だからこそ、カッピングで風味をとることは欠かせませんし、他のロースターが焼いた豆から学び、自らのスキルを磨き続けることも大切にしています。

けれど、もう少しだけ考えてみてください。熱の運動エネルギーも、生豆そのものも、人間が作り出すことはできません。熱を操作することはできます。品種を育種によって改良することもできます。テロワールを最適化することもできます。しかし、原料そのものを生み出すこと、日照や季節という天体のリズムそのものを、人間が操ることはできないのです。

コーヒー生豆の品質は、世界中の多くの人の絶え間ない努力によって、維持され、改良されています。すべては科学的根拠によって成り立つ――そういう立場をとる人もいるでしょう。けれど、わたしはむしろ、科学を追い求めれば追い求めるほど、人間の知能では測り知ることのできない神の存在を、感じずにはいられないのです。だから、聖書が語る「神が天と地を創造し、それを祝福し、人に託された」という言葉が、わたしには本当のことのように思えるのです。

聖書は、「神は人を尊いものとして造られた」と語ります。Over Coffeeは、「人」を大切にすることを理念に掲げて立ち上がり、運営されています。焙煎による風味づくりも、わたしひとりではなく、Over Coffeeの仲間とともに作り上げているものです。
たった一杯のコーヒーかもしれません。けれど、飲んでくださる方が、ホッと一息をつきながら、自分という存在が思っているよりもずっと尊いものだと感じられる――そんなひとときになればと願っています。

だから、焙煎するとき、わたしはいつも祈っています。このコーヒーを飲む人を、神が祝福してくださるように。わたしにとって焙煎とは、神への献げものです。「主があなたを祝福し、あなたを守られますように」(民数記6章24節)

He rides the waves off the coast of Chiba, stands before his church as a pastor on Sundays, and spends his weekdays at the roaster. Tetsuya is the co-founder and chief roaster of OVER COFFEE, a specialty coffee café and roastery in Kichijoji, Tokyo. Surfing, faith, and coffee roasting grow from the same root in him. Here he is, in his own words.

"For me, roasting is an offering to God."Say that, and people might think, "What on earth is this guy talking about?" And maybe they'd have a point.

Coffee roasting is a science. Flavor is born from the thermochemical reactions that occur when heat is applied to green beans. Charge temperature, airflow, burner output, the rate-of-rise curve, time: every one of these is controlled by numbers. Even the "crack," which happens as moisture content, density, and rising internal pressure interact inside the bean, can be explained as a physical phenomenon.

Sensory evaluation, on the other hand, can never be fully quantified. In the end, it comes down to the roaster's experience and intuition. The rhythm of the cracks, the look of the beans, the aromas rising from the drum: you have to sense subtle changes that no sensor can fully capture, using all five senses, and adjust in the moment. That's why cupping to assess flavor is indispensable, and why I also make a point of learning from beans roasted by others and continually honing my own skills.

But think about it a little further. Human beings cannot create the kinetic energy of heat, nor the green bean itself. We can manipulate heat. We can improve varieties through breeding. We can optimize terroir. But we cannot create the raw material itself, and we cannot command the celestial rhythms of sunlight and the seasons.

The quality of green coffee is maintained and improved through the tireless efforts of countless people around the world. Some would take the position that everything rests on scientific evidence. For me, though, the more deeply I pursue the science, the more I can't help but sense the presence of a God beyond the measure of human understanding. And so the words of the Bible, that God created the heavens and the earth, blessed them, and entrusted them to humankind, ring true to me.

The Bible tells us that God made each person precious. Over Coffee was founded, and is run, on the principle of valuing people. The flavors we craft through roasting aren't something I create alone, either. They're something I build together with my fellow team members at Over Coffee.

It may be just a single cup of coffee. But my hope is that, as people pause and take a breath over it, it becomes a moment where they can sense that they themselves are far more precious than they realize.

So whenever I roast, I pray. I pray that God will bless the people who drink this coffee. For me, roasting is an offering to God.
